Ingredients

  • 1lb courgettes – cut into 1 inch chunks
  • 2oz butter
  • 1 small onion
  • 1 clove garlic
  • 8oz tomatoes
  • 1 teaspoon sugar
  • 1 – 14oz tin of tomatoes
  • 2 tablespoons chopped fresh herbs – parsley, chives & basil
  • Fresh ground pepper
  • 3 eggs – beaten
  • 2oz – grated parmesan cheese
  • Oil to brush dish
  • Quiche dish
  • Either make of buy pastry for the case

Method

  1. Pre heat oven 375F/175c
  2. Line the quiche dish with pastry
  3. Place the courgette chunks in a saucepan & sprinkle a teaspoon of salt, heat gently
  4. Add half of the butter, cover & cook until tender
  5. Drain and transfer to a bowl
  6. Melt the remaining butter, and gently fry the onion & garlic until soft not brown
  7. Add tomatoes, salt and sugar, cook gently for 5 minutes
  8. Add tinned tomatoes and half of the herbs
  9. Cook uncovered for 10 – 15 minutes, until most of the liquid has been evaporated & the tomato mixed has thickened
  10. Add tomatoes mix to courgettes
  11. Cool slightly then mix in the beaten eggs, cheese, herbs, salt and pepper
  12. Turn into a quiche dish & bake in a preheated oven for 20 – 25 minutes, until well risen & firm to the touch
  13. Allow to cool and set. Delicious with a green salad
